The Legacy

A Winemaker's Vision

In 2021 Paris Sigalas returns to his family winery – the place where the Sigalas Estate was born – with a deeper understanding of the great terroir of Santorini and Assyrtiko. There, he created OENO P, with a clear vision to create the best Assyrtiko, believing that this unique vineyard still has much to reveal to us.

Paris Sigalas is a pioneer winemaker with over 30 years of experience, who has invested in the potential of the Santorini vineyard, and has played a key role in the global recognition of Assyrtiko.

Where tradition meets innovation

OENO P is designed for small production aiming at high quality that can express the complexity of the Santorini vineyard. Our wines are crafted using big-volume amphoras and natural fermentation, techniques that allow each vineyard’s true character to emerge.

At OENO P, we craft limited-production, terroir-driven wines that capture the essence of Santorini’s volcanic landscape. Specializing in Assyrtiko and indigenous Greek varieties, we follow traditional methods with modern precision, allowing the natural characteristics of our vineyards to shine.

Terroir-Santorini

Soil

The unique volcanic soil of Santorini, which gives the island's wines their distinctive character and exceptional quality, is one of the main reasons why this vineyard is often described as a living museum.

Climate

The climate is best described as Mediterranean, with mild winters and cool summers (due to the strong northerly winds). The vines are also relieved from the heat because of the sea breeze. Average annual rainfalls range up to 350 mm, and the average temperature is 16.5°C.

Pruning

Santorini's ancient "giristi" pruning technique shields grapes from strong winds and intense summer sun with a leafy canopy, shaping the vines like a stork's nest.

Varieties

Santorini’s 3,000-year-old vineyard hosts over 50 grape varieties, many indigenous. Assyrtiko, the island’s flagship white grape, covers 70% of the vineyards and is now cultivated beyond Greece. Mavrotragano, a native red, is also gaining recognition beyond Santorini.
